Calling all fellow todds who, like me love making mommy new homemade - by me, creations every day! I have made a life-changing discovery in the world of art!! Doodoodoodoooo…. let me introduce GLOB all natural paint sets!!! I kid you not, Glob is an all natural art company that makes their paints out of all edible things – lemon verbena (mom said that’s some kind of herb), blueberry, pomegranate, tangerine, plum purple, and basil green! Every color is made from fruits, vegetable, and herbs with all natural ingredients and organic extracts! Even the cups and brushes are compostable and cruelty-free (all good things mom says.) They even smell like fruits while you paint. Each color gets its own little cup and you can even get mini tins with lids to store them in. Trust me, I’ve tried it!

Full admission… I may, on occasion try out the blue paint just to see if it tastes as blueberry-tasty as it looks. Fellow todds back me up on this one.  Before mom found Glob, she’d panic upon seeing my blue mouth. Now… have no fear, Glob is here! While I recommend asking mom for a cup of actual blueberries if hungry, now no one needs to worry if we should get the urge to taste our paints!

Slow Cooker Apple Cinnamon Steel-Cut Oatmeal

As the weather gets cooler I tend to crave a warm breakfast to start out my day. I love making oatmeal, but it takes some time and attention. Mornings can be hectic for many of us, especially when you add an energetic kid to the mix. Using your slow cooker to make oatmeal is super easy and breakfast is ready to go when you wake up in the morning.

Steel cut oats are an amazing whole grain. They are great source of fiber, protein, magnesium, iron, potasium and carbohydrates.

I made an apple cinnamon steel cut oatmeal in the slow cooker last night. Sophia LOVED it and so did my husband (who normally frowns at the sight of oatmeal).

Ingredients

  • 1 Cup Organic Steel Cut Oats (I use Bob’s Red Mill)
  • 3 1/2 Cup Water
  • 1/2 Cup Organic Apple Juice (you can use all water if you prefer)
  • 2 TBSP Organic Brown Sugar
  • 1/2 TSP Cinnamon
  • 1 TBSP Organic Butter
  • 1 Medium Apple, peeled, cored, and chopped
Directions
  1. Combine all ingredients in the slow cooker and stir to mix.
  2. Cover and cook on LOW for 7-9 Hours or overnight.
  3. In the morning, stir the oatmeal well.
Serving Suggestions: I added a little milk. If you have extra, you can freeze this in your baby food cubes or other freezer safe containers.

We Love Lassi!

mango-lassiAt our house, we love Lassi! Although Sophia is a huge fan of dogs, I am not referring to Lassie the dog, rather the Indian yogurt drink called Lassi. Lassi is an indian yogurt based drink that is commonly flavored with mango pulp and sometimes honey for sweetness. Lassi is full of beneficial probiotics. Probiotics are a type of beneficial bacteria found in your gastrointestinal tract that can be beneficial to your health. The benefits associated with probiotics include: enhanced immune system response, increased ability to digest foods, increased ability to assimilate the nutrients from food, alleviates many common digestive disorders (constipation, diarrhea and IBS) and increases the ability of the body to absorb calcium (among many others). We discovered Lassi at the San Rafael Farmers Market, Lakshmi Lassi makes their Mango and Rose Lassi from Organic Strauss Yogurt and it is delicious! I have also tried the Mango Lassi from Trader Joes..it is good too (not as good as Lakshmi Lassi). I have been reading through Lassi recipes and plan on trying to make some on my own. I will add a new post with the recipe when I find something we all like.

Making the Most of Leftovers

We all get so busy during the week it is hard to put a homemade meal on the table every night. When you put effort into making a nice dinner for your family, why not make that food last for more than one meal?

Roasted chicken is the perfect multi meal dish that is not only delicious, but can make several more meals for your family during the week.

Simple Organic Roasted Chicken

  • One 4 or 5 lb Organic Whole Chicken
  • 1 TBSP Organic Chopped Rosemary (** please feel free to use any combination of herbs that you like. You do not need to use all three).
  • 1 TBSP Organic Chopped Thyme
  • 1 TBSP Organic Chopped Sage
  • 5 Garlic Cloves (Crushed or Minced with garlic press)
  • 1/4 Cup Organic Extra Virgin Olive Oil

Directions

  • Pre-heat oven to 375
  • Chop Herbs (or put in a mini food processor)
  • Mince Garlic
  • Mix together herbs with garlic and olive oil
  • Rub salt and pepper under the chicken skin
  • Rub the olive oil mixture under the skin of the chicken
  • Place chicken on a roasting stand (**I believe that this is the best way to get an evenly cooked and perfectly browned chicken. In the roasting stand below, the chicken actually stands up straight. It looks pretty funny!)
  • Cook 20 minutes per lb or until meat thermometer registers 180
Lunch Leftover Suggestions: Make a simple chicken salad. Use extra chicken in a quesadilla.
Dinner Leftover Suggestions for the Babies/Toddlers: Cheesy Roasted Chicken with Peas and Spinach (see below)
Cheesy Roasted Chicken with Peas and Spinach
  • 1 Cup Chopped Roasted Chicken (by the way, feel free to cheat and buy an organic roasted chicken from the grocery store)
  • 1 Cup Organic Frozen Peas
  • 1/2 Cup of finely chopped Organic Frozen Spinach
  • 1/2 TSP Pepper
  • 1 TSP Salt
  • Simple Cheese Sauce (see below)
Directions
  • Mix chicken, peas and spinach together
  • Gently stir in the simple cheese sauce and salt and pepper.
Serving Suggestions: Serve with brown rice or quinoa.
Storage Suggestions: For those of you who are past the puree stage, you may have thought you are done with those freezer storage trays..wrong. I use them all the time to freeze non-pureed food for Sophia. Place the cheesy chicken in freezer trays or cubes and simply re-heat when you are ready to serve!
Simple Cheese Sauce (recipe from Annabel Karmel)
  • 1 TBSP Organic Butter
  • TBSP Organic all-purpose flour
  • 1 Cup Organic Whole Milk
  • 1/3 Cup Organic Sharp Cheddar Cheese
Directions
  • Melt the butter in the saucepan and stir flour in to make a smooth paste (cook for 1 minute)
  • Gradually stir in the milk, bring to a boil and cook for a few minutes over low heat until thickened and smooth.
  • Stir in the grated cheese until melted.
