As the kids, or the kid in you, carves up pumpkin after pumpkin, you are probably realizing that you have a ridiculous amount of pumpkin seeds piled up. Instead of just dumping them in the trash with all the other pumpkin goop, you can use these nutritious little guys in your everyday meals or for super yummy treats. Pumpkin seeds are very low in Cholesterol and Sodium and are a good source of Protein, Magnesium and Zinc.
Here are some ideas to use up those tasty little seeds…
Baby Spinach, Avocado, and Pumpkin Seed Salad

Put the spinach leaves and pumpkin seeds into a large salad bowl.
Halve the avocados and then remove the stones. Spoon out the flesh over the salad leaves and pumpkin seeds.
Mix the olive oil, lime juice and zest in a small bowl. Add the salt and whisk to emulsify.
Pour the dressing over the salad, and then gently toss everything together using your hands. Take care not to mush the avocado pieces.
